I’m as much of a healthy-eating champion as the next food blogger, but I like to believe that an occasional treat never hurt. In fact, I think allowing yourself and the family to indulge once in a while is a great way to foster healthier relationships with food. When children see food as a source of both nutrition and joy–not just a daily, boring necessity that needs to be controlled and critiqued constantly–they’ll naturally be more interested in it and be open to learning more about it. So for all families who deserve a treat this week, here’s a 30-minute recipe that shares the joy that is bacon.
Ingredients (serves 2)
- 1 cup jasmine rice
- 2 stalks scallion, chopped
- 2 eggs
- 7 slices bacon
- 15 baby carrots
Steam rice, the night before if possible for the best texture. If not, cook so that the rice is one the dry side.
In a large skillet or pan, fry the bacon, then set it aside and cool. Fry carrots in bacon fat until soft.
In the meantime, break cooled bacon into pieces. Add bacon bits and chopped scallion to pan. Beat eggs, add to pan, and stir until egg is cooked.
Drain half of the bacon fat. Add rice, mixing to coat fat evenly. Fry until rice takes on a slightly brown color. Enjoy!
