Crazy Crunchy Cool Cucumber Salad

Moms have said time after time, “Eat your vegetables.” And, as we start to learn when we grow up, sometimes mothers do know best. From a kid’s perspective, though, sometimes those orange carrot sticks and other leafy greens that adults call vegetables just seem so boring–which is what a few groups in the city are trying to change.

This month, Whole Foods Market is teaming up with the Veggiecation Program, a multi-subject nutrition education initiative for private and public schools, to encourage kids to love vegetables and other healthy foods. The cooking classes will take traditionally icky ingredients like cucumber and parsley and transform them into enticing snacks like a Crazy Crunch Salad and Speckled Smoothie. Like any great kids event, these include goodie bags of games, stickers, recipes, and more.

Crazy Crunchy Cool Cucumber Salad
Makes 5 servings

Tools

  • Vegetable Peeler
  • Knife
  • Cutting Board
  • Mixing Bowls
  • Measuring Cups and Spoons
  • Whisk

Salad Ingredients

  • 3 cucumbers, peeled, cut in half lengthwise, seeds removed and cut into quarter inch half moons
  • 1 cup thinly sliced radishes
  • 4 Tbsp. chopped fresh mint

Dressing Ingredients

  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. honey
  • 2 Tbsp. white wine vinegar
  • 4 Tbsp. Canola or Olive oil
  • Pinch of salt

Directions

In a mixing bowl, combine the cucumbers, the radishes and the mint. In a separate bowl, combine all the ingredients for the dressing and whisk until blended. Pour the dressing over the cucumber and radish mixture and toss gently.

Treehouse Shakers

<div>Treehouse Shakers’ Branching OUT After-School program is for ages 12-14. This awarded program is for young people who identify as LGBTQIA+, or are seeking to become better allies. Branching OUT centers on discovering and exploring one’s story and identity through an intentionally artist-led format. During our community-based program, young people will explore and reflect on their own story to create a larger, more meaningful experience, while gaining self-empowerment and gathering with like-minded peers.
